Combine the cheese curd and soft cottage cheese in a bowl, then add sugar substitute to taste and stir until smooth.

In a separate bowl, whip the 3 egg whites until stiff peaks form, then gently fold them into the cheese mixture until just combined.

Pour the strong coffee into a shallow dish. Quickly dip each bran biscuit into the coffee for 1-2 seconds on each side.

Arrange a layer of dipped biscuits in a dish, then spread half of the cheese cream on top.

Create a second layer with the remaining dipped biscuits and top with the rest of the cheese cream.
