Rinse the apples and pat them dry with a clean kitchen towel. Using a sharp knife or mandoline, slice them into thin circles approximately 3mm thick, leaving the skin on for texture and nutrients.

Line a large baking tray with parchment paper. Arrange the apple slices in a single layer, spacing them slightly apart so they cook evenly.

Sprinkle the cinnamon evenly over the apple slices according to your taste preference.

Place the tray in a preheated oven at 100°C and bake for 1.5 to 2 hours, until the apples are completely dried and the edges begin to curl slightly. Check them at the 1.5-hour mark.
