Sugar-free chocolate brownie

A chocolate brownie without sugar sounds like a compromise and eats like a genuine treat. The texture is dense and fudgy, the chocolate is still the main event, and I eat one without any of the feelings that usually follow. This is the recipe that made me stop buying the other kind.

Ingredients

  • 120 gRipe banana
  • 11 gCocoa powder
  • 1Egg
  • 25 gAlmond flour
  • 16 gPeanut paste
  • to tasteSugar substitute

Method

    Preheat your oven to 180°C. Peel the ripe bananas and mash them thoroughly with a fork in a medium bowl until no lumps remain.

    Add the 2 eggs, 3 tbsp cocoa powder, 50g almond flour, 2 tbsp peanut paste, and sugar substitute to taste. Stir well to combine.

    Continue stirring until the mixture is completely smooth with no streaks of cocoa or flour visible.

    Pour the batter into a greased baking tin or mould, smoothing the top with a spatula.

    Bake at 180°C for 20–25 minutes, until a skewer inserted into the centre comes out with just a few moist crumbs attached.

    Remove from the oven and allow the brownie to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
