Place the cocoa butter in a heatproof bowl and melt it over a pot of gently simmering water (double boiler method), stirring occasionally until completely smooth.

Remove the bowl from heat and sift the cocoa powder into the melted cocoa butter, stirring well to combine until no lumps remain.

Add your sugar substitute to taste, stirring until fully incorporated.

Fold in your choice of nuts or dried fruit, distributing them evenly throughout the mixture.

Pour the chocolate mixture into your chosen moulds, filling each cavity three-quarters full.

Refrigerate for at least 30 minutes, or until the chocolates are firm and easily release from the moulds.
