Grate the hard-boiled eggs and cheese on a coarse grater. In a bowl, combine the grated mixture with ricotta, finely chopped dill, and a pinch of salt and spices. Mix until you have a well-combined filling.

Cut the phyllo sheet into strips about 5-7 cm wide.

Place a spoonful of filling on each strip in a square shape. Fold the strip into a triangle, making sure all edges are sealed with no open sides. If needed, trim any excess phyllo.

Crack the raw egg into a shallow bowl and beat it lightly. Dip each triangle into the beaten egg, coating both sides, then generously sprinkle with sesame seeds.

Arrange the triangles on a baking sheet. Bake at 180°C for 12-15 minutes, until the edges are golden and the coating is set.
