Toast the whole grain bread in a toaster or on a dry skillet over medium heat for 2-3 minutes, until golden and crispy.

While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash with a fork until you reach your desired consistency, then mix in the lemon juice, salt, and a pinch of pepper.

Spread the avocado puree evenly over the warm toast.

Heat a skillet or non-stick pan over medium heat with a small amount of oil or butter. Crack the egg into the pan and cook for 3-4 minutes until the whites are set and the yolk reaches your preferred doneness, or alternatively, poach it in simmering water for 3-4 minutes.
