Oat Flake Pancakes with Salmon

Smoked salmon on an oat pancake is the kind of combination that looks elaborate but requires almost no effort to pull together. I make this on quiet mornings when I want breakfast to be a little event rather than just a necessity.

Ingredients

  • 2Eggs
  • 50 gOat flakes
  • a piacereSalt, pepper
  • 60 gSmoked salmon
  • 1 cucchiaioCream cheese

Method

    Add the oat flakes to a blender and blend on high speed for 10-15 seconds until you have fine crumbs (not flour). Transfer to a bowl.

    Crack the eggs into a separate bowl and whisk until well combined.

    Add the oat crumbs to the eggs, season with salt and pepper to taste, and mix until you have a smooth, lump-free batter.

    Heat a non-stick skillet over medium-high heat. Pour the batter into the pan and cook for 3-4 minutes, until the bottom is golden and set.

    Carefully flip the pancake and cook the other side for 2-3 minutes until golden. Transfer to a plate.

    Spread the cream cheese over half of the warm pancake in an even layer.

    Arrange the salmon slices over the cream cheese, then lightly sprinkle with pepper and serve immediately.
