Caesar Salad with Chicken

My version of Caesar doesn't compromise on flavor — it simply swaps out heavy mayonnaise for something that truly serves your body. Greek yogurt gives you the same creaminess with a fraction of the calories, and the chicken makes it a complete meal. Ready in 15 minutes.

Ingredients

  • 1 filetto medio (circa 200 g)Chicken breast
  • 70gLettuce leaves
  • 30 gParmesan
  • 50 gGreek yogurt
  • 1 spicchioGarlic
  • 1 cucchiaioOlive oil
  • 1 cucchiaoLemon juice
  • 1 cucchiainoDijon mustard
  • a piacereSalt and pepper

Method

    Season the chicken breast with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat, then cook the chicken for 6-7 minutes on each side until golden and cooked through. Transfer to a plate and let it rest for 5 minutes, then cut it into bite-sized pieces.

    While the chicken cooks, finely mince the garlic clove. In a small bowl, whisk together the Greek yogurt, minced garlic, Dijon mustard, and lemon juice until combined.

    Stir in the grated Parmesan and season with salt and pepper to taste.

    Chop the lettuce leaves into bite-sized pieces and place them in a large bowl. Add the sliced chicken, pour the dressing over top, and toss gently until everything is well coated. Serve immediately.
