Butternut Squash Soup

Every autumn I go through a phase where I make this constantly, and I've never regretted it once. Roasted squash transformed into something silky and sweet — a pinch of nutmeg, a cloud of cream if you're in the mood. Thirty minutes and it tastes like an entire season.

Ingredients

  • 500 gButternut squash
  • 120 gOnion
  • 1 spicchioGarlic
  • 500 mlVegetable broth
  • 100 mlHeavy cream 10%
  • 1/2 cucchiainoGrated ginger
  • ½ cucchiainoTurmeric
  • a piacereSalt, pepper
  • per servirePumpkin seeds

Method

    Peel and cut the squash into 2 cm cubes. Finely chop the onion and mince the garlic cloves.

    Heat a large pot over medium heat. Add the chopped onion and cook for 3-4 minutes until softened, then add the garlic and squash cubes. Cook for 2 minutes, stirring occasionally.

    Sprinkle the grated ginger and turmeric over the vegetables, stir well, and cook for 1 minute until fragrant.

    Pour in the vegetable broth and bring to a gentle boil. Reduce the heat and simmer for 20 minutes, until the squash is very tender.

    Remove the pot from heat and let cool slightly. Using an immersion blender, blend the soup until smooth and creamy.

    Stir in the cream and gently heat over medium heat for 2-3 minutes, without letting it boil. Season with salt and pepper to taste.

    Pour the soup into bowls and generously top with pumpkin seeds before serving.
