Beet and Goat Cheese Salad

Beets and goat cheese are such a perfect pairing that it should be a rule rather than a suggestion. The earthy intensity of the beets against the decisive creaminess of the cheese — it always works. I eat it as an appetizer or as a light lunch and it always feels like more than the sum of its parts.

Why this works — Mila's notes

BEETS AND NITRATES

Beets are rich in nitrates that convert to nitric oxide, naturally improving circulation, energy, and blood pressure without medication.

WALNUTS AND OMEGA-3

Walnuts contain ALA, a plant-based omega-3 that reduces inflammation and promotes hormonal balance. Polyphenols nourish beneficial gut bacteria, essential for serotonin and mood.

GOAT CHEESE AND BIOAVAILABLE CALCIUM

Goat cheese contains more bioavailable calcium and A2 protein, ideal for absorption and bone health. Probiotic cultures support your gut microbiome.
