Chicken Breast in Coconut Milk

Ingredients

  • 2 petto di pollo medio (approx. 360-400 g)Chicken breast
  • 200 mlCoconut milk
  • 1/2 gamboLemongrass
  • 1/2 cucchiainoGinger
  • ½ cucchiainoTurmeric
  • 1 spicchioGarlic
  • a piacereSalt

Method

    Mince the garlic cloves and ginger. Cut off the lemongrass stalk and slice it into 2-3 pieces.

    Cut the chicken breast into portions and pat dry with paper towels.

    Heat a large skillet over medium heat. Add the minced garlic and ginger, stirring constantly for 1-2 minutes until fragrant.

    Add the turmeric and stir for 30 seconds to blend the aromatics.

    Add the chicken to the skillet and cook for 3-4 minutes, stirring occasionally, until the surfaces are sealed and lightly golden.

    Pour in the coconut milk and add the lemongrass pieces and salt to taste. Stir well to combine everything.

    Reduce the heat to low, cover the skillet, and simmer gently for 20 minutes until the chicken is cooked through and tender.

    Remove the lemongrass pieces before serving. Taste and adjust the salt if needed.
